Ingredients:
(Makes 4 servings.)
1 pork tenderloin
1 box grape tomatoes, sliced in half
2 vine tomatoes, cut in large chunks
20 pearl onions, peeled
2 green onions, sliced thinly
2 bay leaves
Basil
1 cup white wine (Riesling)
3 tbs olive oil
Salt & pepper
Pork:
1. Preheat the oven to 350º
2. In a preheated sautée pan, add olive oil and brown the tenderloin whole
3. When the outside is brown, place tenderloin in a baking dish and place into the oven
Sauce:
1. In the same pan and using the same oil, put the onions and tomatoes, add salt & pepper and the bay leaves
2. Let simmer for 4-5 minutes
3. Add white wine, basil and green onions
5. Let it simmer another 3-4 minutes
Serving suggestions:
1. When pork is done, slice it and serve it on bed of pasta
2. Top with the sauce
