Cambodian Beef

Curry Paste:
Galangal, lemon grass, shallots, 2 thai peppers, garlic, kefir lime, fresh tumeric, curcumin.

1/2 lb Teres Major, sliced very thinly.
Green & red Bell pepper, onion thinly sliced.
Soy sauce, fish sauce, salt & pepper, water.

1. In a mortar or mixer, mix Galangal, lemon grass, shallots, thai peppers, garlic, kefir lime, fresh tumeric and curcumin until you get a fine paste.
2. In a sautéed pan, sautée the onions and the bell peppers until the onion becomes translucent.
3. Add 1 tblsp of the curry paste you just made. Add salt & pepper, soy sauce, fish sauce and 2 tblsp of water.
4. Add the beef and sautée it with the rest for 2 minutes.

Serve on a bed of Jasmine rice and sprinkle with very thinly sliced kefir limes.
